| Flour | 200g | sieved |
| Olive oil | 50g | |
| Sugar | 50g | |
| Salt | 5g | |
| Butter | 30g | for brushing |
Instructions
- Put 3 eggs, 50g of sugar, and 5g of salt into a deep bowl. Mix with a whisk until sugar dissolves.
- Add 250ml (half!) of milk and mix.
- Sieve 200g of flour into the mix and mix until homogeneous.
- Add the rest of the milk (250ml) and 50g of olive oil, then mix.
- Let rest for 30 mins.
- Heat a thick pan over medium heat.
Cook each pancake
- Pour in around 50ml of batter, then tilt the pan to spread it thinly.
- When the top is almost dry, flip and cook for another 15-20s.
- Move to a plate and lightly brush with butter.
