Russian Pancakes

Ingredients

Instructions

  1. Put 3 eggs, 50g of sugar, and 5g of salt into a deep bowl. Mix with a whisk until sugar dissolves.
  2. Add 250ml (half!) of milk and mix.
  3. Sieve 200g of flour into the mix and mix until homogeneous.
  4. Add the rest of the milk (250ml) and 50g of olive oil, then mix.
  5. Let rest for 30 mins.
  6. Heat a thick pan over medium heat.

Cook each pancake

  1. Pour in around 50ml of batter, then tilt the pan to spread it thinly.
  2. When the top is almost dry, flip and cook for another 15-20s.
  3. Move to a plate and lightly brush with butter.
